All about tea fermentation

Tea production is a series of various steps, which starts with freshly-plucked leaf and ends with dry tea leaves which are ready to brew. Some steps are common for all kinds of tea and (plucking, sorting etc) and other are unique for different kinds of tea. Fermentation is one of them and tea is often described as either not-fermented, semi-fermented or fermented.

Tea Competitions in Taiwan

One of the main events in the life of Taiwan tea is tea competitions. Ongoing competitions were revived in Taiwan in 1976 after a long break. The aim was to determine the best tea (local oolongs), investment raising, teaching of the correct use of tea. A very important aspect was preservation of high level of Taiwan tea because take part in the competition could only the best suppliers.

Blooming tea

Flowering tea or blooming tea is a special kind of tea. In the dry form, it looks like a tight ball. This ball is hand-made from dried tea leaves twisted around one or several dried flowers.

Fu Shou Shan (Fushoushan)

Fu Shou Shan (Fushoushan) (福壽山) is a mountain located in Heping District, Taichung City at an altitude of 1,800-2,580 meters above sea level and surrounded by mountains. It spreads over an area of 800 hectares. The farm was originally established on 1 June 1957 when 100 Republic of China Armed Forces veterans were sent by Veterans Affairs Council to develop the area into an agricultural site. It was originally named "Li Shan Veterans Farm".

Leaf structure in tea

The ideal leaf structure for hand-picked tea is 2-3 leaves, a bud and a stem. When tea is harvested by hand, farmers can choose the ideal part of the plant that is most suitable for high-quality brewing, and usually these are the new growth of the tea bush (2-3 leaves, bud and stem).

Many people cannot start the day without a cup of coffee, but there is a claim that tea invigorates the body more than coffee. And tannins - plant-based chemicals belonging to the group of phenolic compounds - help in this.

In one of our blog articles, we talked about four seasons of tea harvesting in Taiwan. The main ones are only two - spring and winter harvest. Currently, there is an opinion that the difference between spring and winter teas is erased, and they are becoming more similar in their taste. Winters are getting less cold, the weather is more unstable, all this leads to such changes.
