This is Rare Honey GABA Oolong (Cui Yu / Tea #13) from Mei Shan Mountain in Chiayi County which grows on the altitude 900-1000 metros.

This is very rare tea, only 900 kilos were harvested this year. Honey GABA is also named “Early spring tea”. It is fully organic and harvested only by hand. Only first leaves are using for this premium tea. Each leaf is checked for a quality before and after drying.

This Honey GABA Oolong follows typical GABA processing: after picking the leaves are placed into a special deoxidation vacuum machine. During this processing oxygen is removed from the machine by replacing it with nitrogen and the tea is left to slowly oxidize in this unusual environment. The oxidation process happens very slowly due to lack of oxygen in the machine, increasing the GABA content and developing the characteristic GABA flavors. This also positively affects the tannins, greatly reducing them to produce a smoother, less astringent taste.

Mei Shan is a small town located on the back side of Ali Mountain Area, which is prime tea growing county. Steep slopes, thick humidity and cool evening temperatures make the perfect environment for great tea. Tea grows on the height 500-1500 m, and together with unique climate this gives to the tea very soft and sweet taste.

Leaves: Leaves are greyish-green, rolled into small balls.

Taste

This tea has very soft taste with light honey flavor, very nice and long aftertaste.

Brewing

Warm up the tea pot with the boiling water, put 2-5 grams of tea, and pour small amount of the boiling water into the tea and pour out, then pour 225-250 ml of boiling water and cover tea pot for three minutes before serving.

Boiling temperature - 95°C (205°F).

You can use this amount of tea 8 to 10 times.

The tea leaves come unrolled for full flavor.

Additional information

This is one of the traditional ways of brewing. Depending on individual gustatory preferences you can vary brewing time from 35s to 5 minutes.

You can also use Chinese traditional way of brewing - spilling, using Gaiwan and brew for 3-5 second each time.

Please note, that it is natural tea with high content of active elements, including caffeine, and minerals and some unusual feelings could appear. In that case we recommend decrease quantity of dry leaves and brewing time.
